We believe in a direct approach to food. By sourcing your beef from our family farm, you are opting for transparency in how animals are raised, how they are handled, and how your food is prepared. We avoid corporate processing methods in favour of traditional butchery and the science of preservation.

Pasture-raised, Fullblood Wagyu

We focus on the foundations of agriculture: soil health and pasture quality. Our Fullblood Wagyu are raised on the native and improved pastures of our Southern Highlands farm.

  • Regenerative Practices: We manage our land to support long-term ecological health, which we believe is essential for producing nutrient-dense beef.
  • Humane Standards: All cattle are raised according to independent third-party welfare standards.
  • Natural Growth: Our cattle are never administered hormones or antibiotics. We also avoid synthetic interventions, including mRNA vaccines and feed additives like Bovaer or Rumin8.

Traditional Butchery

We partner exclusively with Hot Canary in Bowral, where master butcher Daniel oversees the breakdown of every carcass. This is a deliberate choice; having a master butcher ensures the trim and portioning respect the quality of the beef.

Our approach to preservation

We avoid "gas-flushing" (Modified Atmosphere Packaging), which is the industry standard for extending shelf-life in retail. Instead, we use a simple process:

Aging

Each carcass is aged for two weeks to develop texture.

Butchery

Cuts are portioned by hand.

Flash frozen

After the beef is cryovaced, it is flash frozen immediately.

The Science

When beef is refrigerated and then flash frozen in a standard home environment, the slow cooling process causes large ice crystals to form, which can damage the muscle structure. By freezing immediately after cryovacing, we prevent these crystals from forming. This maintains the integrity of the meat and allows it to remain at its peak quality in your freezer for up to 12 months.

Our entire range—from steaks to sausages—is free from:

Our sausages and mince are made from meat, salt, and natural spices. If an ingredient is not essential, we do not include it.
